Things are beginning to heat up and dry out. Did you hear the big news? The National Weather Association has declared we are no longer in a drought! We have been in a drought for the past six years and we have finally received enough rain to be out of it. In one month we have received the average annual rainfall. I did not personally experience any flooding. Elektra, the trailer, did not spring any leaks! We didn't float away in any river. The area is green and lush. Some of us have had trouble finding the mile markers at the local hike/bike trail.
Thanks to the advise of my brother I tried a couple of tricks and was able to get rid of the pungent smell in the trailer. He suggested I fill the tanks with water and add 2 tablespoons of bleach. Then let it soak while I'm at work (8-10 hours) and then drain the tank. What do you know, it worked!!
When I'm not working one of my current two jobs I have been out enjoying the local music scene. Sometimes we go out to hear one musician and end up listening to four. Four for the price of one!! That's quite a bargain. While we missed the one we were in search of we will find him again. I've really been blessed to hear some amazing music this summer: Charlie Sexton and Doyle Bramhall II, a singer songwriter showcase, and Del Castillo. Thinks to the pregnant sister in law, we were able to get in as VIP's to the Del Castillo show. If you've never seen or heard this band, they rock. They are amazing musicians, great dancers, and hot Latin men. What more can I say? Did you see any of the Robert Rodriguez trilogy (Once Upon A Time in Mexico, etc) they did some of the songs from the soundtrack. One of the band members taught Robert Rodriguez how to play and he plays some of the soundtrack.
The sister in law has delivered a baby boy. They are all healthy and doing well.
I'm going shopping at The Container Store to better utilize my limited space. I'm still perusing old journals and ridding the trailer and storage of fodder. It's been quite a chore!
Recently a friend hosted a brunch. I was unsure what to take that would be dairy free and gluten free. The dish was a hit. I think it could easily be made into a dairy free dish. I was looking for something that cooked less than 30 minutes. This trailer heats up so fast.
Colorful Frittata
1 cup broccoli florets
3/4 cup fresh sliced mushrooms
2 green onions, chopped fine
1/4 tsp garlic salt
1 1/2 cup shredded cheddar
8 eggs
1/4 cup water
1/4 cup Dijon Mustard
1/2 tsp. Italian Seasoning
1 Tbsp butter
1 cup cubed ham (I used Canadian bacon)
1/2 cup chopped tomatoes
In a large skillet, saute broccoli, mushrooms and onion in butter until tender. Add ham. Remove from heat and keep warm.
In a mixing bowl, beat eggs, water, mustard, Italian Seasoning and garlic salt until foamy. Stir in the cheese, tomatoes and broccoli, then mix.
Pour in a greased shallow 1 1/2 qt baking dish. Bake at 375 for 22-27 minutes or until knife inserted in center comes out clean.
